Sea Buckthorn - using up last year's stash

Spring is a time of renewal and new beginnings. With spring equinox so close now, we prepare for the change of season. A time so important to take stock of what we have and make use of it before we are gifted with Mother Natures treasures once again. Recently, I opened my freezer and was surprised to see a big stash of last year's Sea Buckthorn harvest. Time to make an extra effort and utilize them to their fullest potential!

Sea buckthorn is a superfood with numerous health benefits. It's rich in vitamins A, C, and E, as well as antioxidants and omega-7 fatty acids. Consuming sea buckthorn can boost immunity, improve digestion, promote healthy skin, and reduce inflammation.

To make the most of my stash, I decided to make sea buckthorn juice. I added it to smoothies, salad dressings, and elderberry syrup. I even enjoyed it as a beverage on its own. To make the most of the pulp, I dried it and infused it into oil to later use for soap or salves.

As we move into spring, I encourage you to check your storage and make sure you're using everything up before the next harvesting season. Not only will this save you money, but it will also ensure that you're making the most of what nature has to offer. So, go ahead and make some sea buckthorn juice or try incorporating it into your favorite recipes. Your body will thank you for it.

Sending you all much love! Evelyn
